Cold nights and warm days produce a sweet science lesson!
Thanks to a representative from The Radix Center for leading our students through the process of collecting sap and, also, why our neighborhood trees are so special.
Maple cells are filled with gas instead of water. During the freezing nights, gas bubbles condense and pull sap into the conduit cells of the tree. Then, as it warms up during the day, the gas in the cells expand and push sap out of tap holes.
Our third graders enjoyed the hands-on outside lesson as are students from 11 other district schools.
